1075 is tougher and faster to sharpen but 1095 beats it in edge retention and max hardenability. The only real chemical difference is that 1095 has more carbon. Both great steels though 1095 is generally the better knife steel. It still takes a beating and the better edge retention is a plus. The 440C blades from the 80's were mostly crap IMO. I own (ed) Pumas, Gerbers, Kershaw, etc. None held an edge like a carbon mora or green river. Now some of the current SS is another matter - Aus8, VG10, ATS 34/CP154 all are far better in edge holding and heat treatment, but not as good as 1095 series blades, IMO. 440 or 1095? - iKnife CollectorAISI 1095 performs admirably when properly tempered. If a knife is marked stamped "440" or "440 Stainless" or any generic variation where only the "440" is used.. you can downright bet it is NOT 440C. As far as 1095 goes, coming from the "only the super high speed low drag steels are good" crowd, I snubbed 1095, CV, even O1. 1095 and O1 are actually some of my favorite steels, including A2. VS - Versus Systems Inc.Other than the stainless part. 440C is a bit bigger pain in the backside to sharpen than 1095 is. But many have diamond laps these days. So it's not really much of a problem anymore. Still, if you really want to experience sharpening nirvana, rub some old Schrade 1095 on a stone and feel the difference.
